Nicky is the COO of Tolon that she opened with her husband, Matthew, in February, 2016 in downtown Fort Wayne. “Matt wanted a restaurant and I put a plan together. This was the first spot that we looked at in 2009. It needed several updates before we could make the space our own. The Landing is going to be great when it’s done with construction. We came downtown and wanted to be part of the revitalization. It’s exciting to see this whole area grow. We are a farm to table restaurant and that is important to me because I grew up on a small family farm with proteins and a garden. When I moved to Fort Wayne, it’s how I wanted to nurture my own family. At that time, I saw that Fort Wayne was missing the mark in regard to that so when we did this we wanted to be as local as we could. We wanted to give back to the community that had given us so much. We are both transplants to Fort Wayne and it’s important to have that pride, and love where you are at. We wanted to include as many people as possible. Our contractors, farmers, and even those that provide our linens are all from northeast Indiana. It’s important to support local because it’s our community and we are all one family. The common goal is to make Fort Wayne the best it can be. Without people supporting local businesses, we can’t be here. It’s so important to give back to the community that supports you. When I moved here in 1996, there was nothing downtown and now there is everything from parks to a great dining scene. I love seeing people out and about enjoying our city or taking in a baseball game. I just love West Central so much. There’s so much to do downtown and it keeps getting better. Fort Wayne is a great place to raise a family. I have three boys, and will be celebrating our tenth wedding anniversary next week. Tolon is a creation that my husband and I worked on collaboratively. It’s great to work with him on something that we both love. I love my staff. Many have been here since the beginning. It’s a family. Our guests love the atmosphere and we have so many guests that have become friends. To get their love and support is just amazing.” #PeopleofNEI
